Recipe of the day


Sauté in a non-stick pan:
1 tbsp olive oil
1 onion chopped
2 cloves garlic, chopped
1 green or red bell pepper, diced
2 cups fresh or 1 can (10 oz) mushrooms, reserve juice
Add and simmer until heated through:
2 cups ground beef, cooked
1 tbsp paprika
1 cup liquid (juice from canned mushrooms plus beef broth to make 1 cup)
Mix together:
1 tbsp flour
4 tbsp low-fat sour cream or plain yogurt

Stir into stroganoff. Heat until sauce thickens.
Makes 4 servings

I serve this over whole wheat egg noodles. I also make it with ground turkey. Very yummy for a healthy meal.
